Ice Cream Bounties

Admittedly bounties are not everyone's favourite but they are so much better in their ice cream form. This recipe does not strictly have to be coconut it could be strawberry or even ackee for all it matters, but the recipe is a great guide to giving you chocolate smothered fruity ice cream and that's the most important part of these recipes.

Ingredients: -700ml Coconut Icecream

-1/2 A Fresh Coconut (grated)

-500g Dark Chocolate

-500g Milk Chocolate

Equipment: -Two 8.4 x 2.6 x 2cm Bar Moulds

-Piping Bags

-12mm Nozzle Tip

-Icecream Maker (for churning, this is possible to do by hand)

-Step palette Knife

1-Melt both chocolates and line one of the bar moulds in dark chocolate and the other in milk chocolate. Leave to set in a cool area for 1 hour.

2-Churn the coconut ice cream in the Icecream maker and mix in the grated coconut. Spoon the mixture into the piping bag and pipe into the bar moulds until four-fifths full. Use the small step palette knife to level the ice cream. Put into the freezer for 30 minutes.

3-Remelt the chocolates and cap the chocolate bars quickly as the chocolate will set very fast. place back in the freezer for 2 hours.

Eat and enjoy the cool fresh ice cream bar on a lovely and hot sunny day.
