My Choc O' Leight - Artisan Chocolatier

This very naughty but irresistible delight smothered in chocolate is just hands down THE BEST! This is just not good for your diet and that's what makes it so seductive.

Ingredients: -500g (60%+) Dark Chocolate

-500g Milk Chocolate

-190g Caster Sugar

-50g Soft Brown Sugar

-150g Liquid Glucose

-50ml Water

-50g Honey

-10g Bicarbonate of Soda (sieved)

Equipment: -20 x 20 x 6cm Metal Frame

-Deep Baking Tray

-Normal Baking Tray

-Baking Paper (or silicone)




-Sharp Knife

-Candy Thermometer

1-Line the deep and normal baking tray with baking paper.

2-mix the sugars, water, glucose, and honey together in a saucepan and boil to 144 degrees Celcius. When you have reached this temperature remove from the heat source immediately.

3-Slowly stir whilst adding the sieved bicarbonate of soda. (It will rise to the top.)

4-Pour the mix into the deep tray and leave to set for 2 hours in a cool dry area.

5-Use a sharp knife to break into around 20-25 pieces.

6-Melt the dark chocolate and dip half of the honeycomb. Dip the remainder into the melted milk chocolate. Leave to cool for 1-2 hours in a cool dry place.
