Chocolate Mint Bars

Mint and chocolate is a classic combination when it comes to chocolate bars. This is a genuine article for creating your own super-fresh mint chocolate.


Ingredients: -500g Dark Chocolate

-150ml Whipping Cream

-20g Fresh Mint

-280g White Chocolate (chopped)

-20g Unsalted Butter


Equipment: -Chocolate Bar Moulds

-Piping Bags

-Saucepan

-Saucepan Cover (Lid)

-Sieve

-Mixing Bowl

-Spatula


1-Pour the cream into the saucepan and bring to the boil. Remove the pan and add the mint; cover the saucepan with the lid and allow infusion for 2 hours.

2-Use the sieve to strain the mixture and reweigh mixture. Add cream to make up for the mixture lost from removing the mint leaves. Bring the infusion to boil.

3-Place the chopped white chocolate into the mixing bowl and pour the boiled cream over; mix continuously until it is an emulsion. Add the butter and mix until fully absorbed then let cool for 15 minutes.

4-Melt the dark chocolate and coat the chocolate bar moulds and leave for 30 minutes.

5-Spoon the white ganache into a piping bag and cut off the end to make a small hole. Pipe the ganache into the lined bar mould until they are four-fifths full. Leave to sit for 30 minutes.

6-With the remaining dark chocolate cap the bars and leave to set in a cool dry place for 1-2 hours.


These bars are cooler than cool, wait until you try them.
